Dos Santos crumbled Fabricio Werdum with a right uppercut for the Knockout of the Night. Santos won his UFC debut eighty-one seconds into the fight.
Fisher tapped out Shannon Gugerty at 3:56 of the third round and won the Submission of the Night.
The fighters each earned a $65,000 bonus for their efforts.
The event itself, the first UFC in Illinois, drew a crowd of 15,359 and a gate of $2.8 million, according to UFC president Dana White.
The live gate for UFC 90 bested the previous record at the Allstate Arena in Rosemont held by 1997's Wrestlemania 13.
